The Nix packaging makes it difficult to override the version of Tahoe-LAFS

The Tahoe-LAFS version is selected based on an internal version pin which is used to initialize an overlay that is added to the given nixpkgs. Since this overlay is appended, it wins.

Accept tahoe-lafs as an optional parameter.
